Bratwurst Burgers with Beer Cheese and Beer Braised Onions

Bratwurst Burgers with Beer Cheese and Beer Braised Onions

 

Ingredients:

  • 4  Kaiser rolls
  • 1 tablespoon unsalted butter
  • 1 large white onion, sliced thin
  • 1 (12 ounce) bottle German-Style lager beer, divided
  • 1 teaspoon sugar
  • 1 teaspoon Worcestershire
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound (1 package) uncooked Yuengling bratwurst links
  • 5 ounces Wisconsin cheddar cheese, shredded
  • 2 ounces Gruyere cheese, shredded
  • 1 tablespoon cornstarch
  • 2 teaspoons spicy brown mustard
  • Hot sauce and Worcestershire, to taste

 

Preparation:

Add thinly sliced onions and about a tablespoon of unsalted butter to a medium-sized frying pan. Sauté the onions until soft and translucent.

Add sugar, Worcestershire, sea salt, freshly ground black pepper, and pour in 8 ounces of German-Style lager beer.

Cook over medium heat until the onions lightly begin to caramelize and most of the liquid has been absorbed, about 20 minutes. Scoop onions into a bowl and cover with aluminum foil to keep warm.

Use a small paring knife to cut through the bratwurst casings. Remove the meat from the casings and divide the meat into 4 equal portions. Form the meat into patties that are approximately 1/4 inch wider than the buns to allow for shrinkage during the cooking process.

Heat grill or a large cast iron skillet over medium heat. Cook patties for 10-13 minutes until no longer pink. Remove the brat patties from the skillet once they reach an internal temperature of 160 degrees F.

Add the cheeses and cornstarch in a medium-sized bowl and toss to coat.

In a small saucepan, bring 4 ounces of lager beer to a boil. Bring the heat down to simmer and add cheese mixture, a handful at a time, stirring constantly to melt the cheese evenly.

After the cheese is completely melted, stir in the spicy brown mustard. Add dashes of hot sauce and Worcestershire sauce, to taste, if desired.

Layer the roll bottoms with the bratwurst patty, then spoon the beer cheese over the patty and then top with the onions. Cover with the top rolls and serve warm.
