California-Style Avocado Toasts

California-Style Avocado Toasts

Ingredients:

  • One ripe avocado, halved, pitted and peeled
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 slices whole grain or whole wheat bread
  • 1 tablespoon unsalted butter, softened
  • 2 slices of beefsteak tomatoes
  • 4 slices thick sliced applewood bacon

Preparation:

Mash the avocados in a medium bowl until chunky-smooth. Stir in the sea salt and freshly ground black pepper; set aside.

Toast the bread until browned and crisp. Lightly butter the toasts.

Divide the mashed avocado evenly among the toasts, and top with sliced tomato, 2 slices of bacon and fried egg.
