Shrimp and King Crab Ceviche

Shrimp and King Crab Ceviche

Ingredients:

  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound real or imitation crab
  • 1/2 cup lime juice
  • 1/2 red onion, cut into thin slivers
  • 1 jalapeño, seeded and minced
  • 1/2 English cucumber, pealed and diced
  • 2 Roma tomatoes, seeded and diced
  • 2 tablespoons cilantro, chopped
  • Sea salt, to taste
  • Tortilla chips or tostadas, for serving

Preparation:

Thaw shrimp, if frozen. Rinse shrimp, pat dry with paper towels. Finally chop shrimp. Place in a medium glass bowl. Coat with lime juice. Toss well to combine. Cover and chill for 30 minutes, stirring once.

Stir in crab meat, onions, jalapeño, cucumber, tomato and cilantro into shrimp mixture. Cover and chill for 5 more minutes.

Serve in a bowl with tortilla chips or spoon over tostadas.
