Cuban Slaw

Ingredients:

  • 1 teaspoon cumin
  • 1/2 cup fresh orange juice
  • 1/4 cup lime juice
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 head cabbage, finely shredded
  • 1 carrot, peeled and shredded

 

Preparation:

In a blender or food processor add the cumin, orange juice, lime juice, red onion, 1/4 cup of cilantro, sea salt and freshly ground black pepper and blend until smooth. In a large bowl toss the cabbage, carrots and remaining 1/4 cilantro with the dressing.
