 Instant Pot® Beef Tips

Ingredients: 

  • 3 teaspoons olive oil
  • 1 pound top sirloin beef tips
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup dry red wine
  • 8 ounces baby Bella mushrooms, sliced
  • 1 small onion, halved and sliced
  • 1 teaspoon minced garlic
  • 1/2 teaspoon thyme
  • 1-1/2 cups beef stock
  • 2 tablespoon s Worcestershire sauce
  • 4 tablespoons cornstarch
  • 1/4 cup cold water
  • Hot cooked mashed potatoes

Preparation:

Select “SAUTÉ“ setting on your Instant Pot ® and adjust for medium heat. Add 2 teaspoons oil. Season beef with sea salt and freshly ground black pepper. Brown meat in batches, adding oil as needed. Transfer meat to a bowl.

Add wine to the Instant Pot ®, stirring to loosen browned bits. Press “CANCEL”.

Return beef to cooker; add the mushrooms, onion, garlic, thyme, stock and Worcestershire sauce.

Cover the Instant Pot ® and secure the lid. Make sure valve is set to “SEALING”. Set the “MANUAL” button to 15 minutes on high pressure. When the time is up let the pot sit there for at least 10 minutes. Then move the valve to “VENTING” and release any remaining pressure. Remove the lid.

Select “SAUTÉ” setting and adjust for low heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into beef mixture. Cook and stir until sauce is thickened, 1-2 minutes.
