Asian-Style Turkey Lettuce Wraps
Yields:4 Servings
Ingredients:
- 1 head Bibb or butter lettuce, washed
- 1 pound ground turkey
- 1/4 cup seasoned rice vinegar
- 1/4 cup hoisin sauce
- 1/4 cup low-sodium soy sauce
- 1/4 cup light brown sugar
- 1/4 cup black bean chili sauce
- 1 teaspoon garlic powder
- 2 teaspoons minced garlic
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon onion powder
- 1 cup Shitake or baby bella mushrooms, chopped
- 1/2 white onion, diced
- 1 tablespoon coconut oil
Preparation:
Heat wok to medium high heat. In a small glass bowl, mix the rice vinegar, hoisin sauce, soy sauce, brown sugar, and black bean chili sauce until well combined.
Grease the wok with coconut oil cooking spray and place the ground turkey and minced garlic in the wok and cook until browned.
Season the turkey garlic powder, freshly ground black pepper, onion powder and half of the liquid mixture, cook another 15 minutes or until it is fully cooked and there is no pink.
Set the turkey mixture aside, and place the mushrooms and onion into the pan and drizzle the coconut oil over it. Cook until the mushrooms are a shiny brown and the onions have softened.
Add the turkey mixture back into the wok and add the rest of the liquid mixture.
Cook until the juice is a little more soaked in.
Serve the turkey mixture with white or brown rice and the lettuce leaves.
