Cajun Shrimp Pasta
Ingredients:
- 1 cup water
- 2 cups vegetable stock
- 6 ounces uncooked dry pasta of your choice
- 1/2 pound medium shrimp, peeled, deveined and tailed
- 1 -1/2 tablespoons unsalted butter
- 1/2 (4-ounce) package mushrooms, sliced
- 1/2 large bell pepper(any color), cut into (1/4-inch-thick) slices
- 1/2 large red onion, sliced
- 1 (14.5-ounce) can unsalted diced tomatoes, undrained
- 2 teaspoons all-purpose flour
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon sea salt
- 2/3 cup heavy cream
Preparation:
Combine 1 cup water and stock in a large pot; bring to a boil. Add pasta to the pot. Bring mixture to a boil. Cover, reduce heat, and simmer for 8 minutes. Add shrimp to pot. Cover and simmer for 3 minutes or until shrimp are done; drain.
Melt butter in a large skillet over medium-high heat. Add mushrooms, bell pepper, onions and tomatoes to skillet; sauté 4 minutes or until moisture evaporates.
Add flour, seasoning, and sea salt to skillet; sauté 30 seconds.
Stir in heavy cream; cook 1 minute or until thick, stirring constantly. Remove from heat.
Add pasta and shrimp mixture to skillet; toss.
Divide among two plates and serve.
