Old Fashion Tomato Rice Soup Meatloaf

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 carrots, diced
  • 1 medium onion, diced or 2 shallots, diced
  • 2 stalks of celery, diced
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 (10.75 ounce) can Campbell’s® Condensed Old Fashioned Tomato Rice Soup
  • 2 tablespoons Worcestershire sauce
  • 1 egg
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup ketchup

 

Preparation:

In a 12” Nonstick Fry Pan with the butter, sauté the carrot, onion, and celery until all are slightly softened.  Remove from heat and allow to cool.

In a large bowl combine the ground beef, ground pork, the softened vegetables, tomato rice soup, Worcestershire sauce, egg, sea salt and freshly ground black pepper, and seasoned breadcrumbs.  Stir to combine all the ingredients.  Continue to add the Panko breadcrumbs until you have a not quite totally dry mixture.

Spoon into a Stoneware Loaf Pan (or other loaf pan) and press to level.  Spread the ketchup on top of the meat.

Place into the center of a 350 degrees F oven and bake for about 1 hour.  Remove from the oven once cooked and allow to rest for at least 5 minutes,  Then slice and serve.
