Southwest Sloppy Joes

Yields: 2 Servings

 

Ingredients:

  • 1/2 pound ground beef
  • 1/3 cup chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup salsa
  • 1/2 can (4 ounces) chopped green chilies
  • 1/4 cup beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground ground pepper
  • 3/4 cups Mexican blend cheese, shredded
  • 2 hamburger buns, split
  • 1 tablespoons butter, softened

 

Preparation:

In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain.

Add garlic; cook 1-2 minutes longer.

Stir in the salsa, chilies, broth, and seasonings. Bring to a boil. Reduce heat; simmer, covered, for 15 minutes, stirring occasionally.

Turn off the heat. Top with cheese, cover and let stand 3-5 minutes.

Meanwhile, toast buns and butter.

Serve 1/4 pound of beef mixture on each of the toasted and buttered buns.
