Sweet and Sour Pork Meatballs

Ingredients:

  • 1/2 pound ground pork
  • 1 egg, beaten
  • 2 tablespoons panko breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground ginger
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 can (20 ounces) unsweetened pineapple chunks, in juice (not syrup)
  • 1/2 cup pineapple juice
  • 1 medium white onion, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 3 tablespoons cornstarch
  • 1/4 cup cold water
  • 1/4 cup rice wine vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1/4 cup packed brown sugar
  • Hot cooked rice

 

Preparation:

Preheat oven to 425 degrees F. Spray a mini muffin tin with cooking spray. In a large bowl, combine the ground pork, egg, breadcrumbs, garlic powder, onion powder, ground ginger, season with sea salt and freshly ground black pepper, to taste.

Form into 12 meatballs, then place in prepared mini muffin tin and cook until golden and cooked through, 25 minutes.

Drain pineapple, reserving juice. Set pineapple aside. In a large skillet over medium heat, cook the onion and bell pepper, 1/2 cup of pineapple juice and the reserved juice from the pineapple can.

In a small bowl, combine the cornstarch, cold water, vinegar, ketchup and soy sauce until smooth.

Add brown sugar and reserved pineapple to the pan; stir in cornstarch mixture. Bring to a boil; cook and stir until thickened, about 2 minutes.

On a plate add the rice topped with 6 meatballs and spoon over the sweet and sour sauce.
