Thanksgiving Turkey Bacon Melt

Ingredients:

  • 1 tablespoon cranberry relish
  • 1 tablespoon mayonnaise
  • 1 teaspoons Dijon mustard
  • 3 strips thick-cut bacon
  • 3 ounces leftover turkey
  • 2 slices sourdough
  • 3 tablespoons caramelized onions, hot
  • 2 slices Swiss cheese
  • 1 tablespoon unsalted butter

 

Preparation:

In a large skillet, cook bacon over medium-high heat to your desired doneness. When bacon is about halfway through cooking, add turkey to the pan and brown evenly on both sides.

Remove the bacon and turkey from the pan and place on a paper towel-lined plate to drain any excess drippings.

In a small bowl mix the cranberry relish, mayonnaise and Dijon mustard.

On the bottom piece of bread, spread the cranberry aioli, then top with 1 slice of cheese, bacon, turkey, onions

and another slice of cheese, and finally top with the remaining bread. Spread unsalted butter evenly on 1 side of each sandwich.

Cook sandwiches, buttered side down, in a Cast Iron Griddle  or nonstick skillet  over medium heat about 3 minutes or until lightly browned. Spread remaining unsalted butter evenly on ungrilled sides; turn and cook 3 minutes or until lightly browned.
