Carne Asada and Elote (Mexican Street Corn) Tacos

 

Ingredients:

  • 2 ears fresh corn
  • 1/2 cup tablespoons mayonnaise
  • 1 tablespoons chopped fresh cilantro, plus more for garnish
  • 1 tablespoon fresh lime juice, plus wedges for serving
  • 2 teaspoons Tapatio
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon sea salt, divided
  • 12 ounces New York Strip Steak
  • 1/2 teaspoon ground cumin
  • 6 (6-inch) corn tortillas
  • 1/4 cup finely crumbled Cotija cheese
  • Diced white onion, for garnish

 

Preparation:

 

Soak corn in water for 20 minutes.  Preheat grill (450 degrees F).

Place corn on grill and cook 30 minutes, rotating 1/3 every 10 minutes. Remove from grill and let cool slightly to remove the husk on and silk.

Return the corn to the grill and char the corn on all sides, approximately 4-5 minutes or until charred. Remove from grill.

Let corn cool slightly and remove corn from the cob.

In a bowl add corn, mayonnaise, cilantro, lime juice, Tapatio, and ancho chile powder; stir to combine. Set aside.

Sprinkle steak evenly with cumin and sea salt.

Increase grill temperature to high (450 degrees F to 550 degrees F). Place steak on oiled grill grates, and grill to desired degree of doneness, about 3 minutes per side for medium-rare.

Transfer to a cutting board. Let rest for 5 minutes.

Grill tortillas until edges become charred, 30 seconds to 1 minute per side.

Thinly slice steak across the grain, and divide among tortillas. Top with elote (corn mixture) and Cotija cheese; garnish with cilantro, onions, and serve with lime wedges.
