Hasselback Tomato Clubs

Yields: 2 Servings

Ingredients:

  • 4 large Roma tomatoes
  • 2 slices Swiss cheese, quartered
  • 4 slices cooked bacon strips, halved
  • 4 slices deli turkey
  • 4 lettuce leaves
  • 1/2 medium ripe avocado, peeled and cut into 8 slices
  • Freshly ground black pepper
  • Flakey sea salt

 

Preparation:

Place a tomato between the handles of 2 wooden spoons or 2 chopsticks. Slice the tomato into thin slices, leaving 1/4 inch at the bottom unsliced; the spoon handles will prevent you from slicing the tomato all the way through. Repeat with the remaining tomato.

Fill each slice with cheese, bacon, turkey, lettuce and avocado. Season with freshly ground black pepper and flakey sea salt.
